Healthy Wonton Taco Cups

These are soooo delicious and such a great alternative to the typical taco or taco salad. I use lean ground beef in my recipe, but you could substitute chicken or make them vegetarian and omit the meat completely.

Healthy Won Ton Taco Cups

- 1 pkg. Won Ton Wrappers
– 1 lb. lean ground beef
– 1 packet taco seasoning (or make your own)
– 2/3 C. taco sauce
– 1 C. brown rice
– 1 C. corn
– 1 can black beans
– Toppings: Sour cream, avocado, taco sauce etc.

- Preheat oven to 350
– Cook ground beef in a skillet over med/high heat until fully cooked. Drain fat.
– Add taco seasoning and just enough water so that beef is fully coated in the seasoning.
– Add rice and 1/3 C. of taco sauce. Stir and remove from heat.

- In a medium bowl combine black beans, corn and remaining 1/3 C. of taco sauce. Set aside.

- Arrange 3 wonton wrappers in each muffin hole so that it forms a “cup”

- Add a couple of spoonfuls of the beef mixture in each wonton cup followed by the bean and corn mixture. (You will have some left over)

- Top each cup with some shredded cheese and bake in oven for about 10-12 minutes.

- Remove from oven and gently pull up on sides and pull each wonton cup out of muffin tin.

Add your toppings and enjoy!
